Oven Roasted Hawaii Style Kalua Pig

I use to own a lunch wagon many years ago called "Hula Lunch Wagon"  It use to be by Hawaiian Airline Cargo at the Honolulu Airport .  Every friday I would have Hawaiian Plate Lunch  that included Kalua Pig I roasted ALOT of pork butts on thursday night :)

Kalua Pig 

Ingredients 
Pork Butt defrosted
Rock Salt (Hawaiian Salt) 
Liquid Smoke I use 1/2 the bottle 
Ti Leaves best , banana leaves ok 

Foil
Bake all day or night 8 + hours in a 225 degree oven @ Bake 

You  need to score the pork butt fat then rub the with hawaiian salt a nice layer all around . place the pork on the leaves if not on the foil , pour 1/2 bottle of liquid smoke and seal foil.  place in a baking pan and cook all day.  
You can also cook it all day in crock pot/slow cooker.  same process . 
You can also put it frozen in the instant pot on high for 1 1/2 hours amazing it will be done in such a short time but it will not have the flavor like in the oven.   I find the oven taste the best.  but they all work.

I taste it and if it needs more liquid smoke or salt i will add more . 
I just made this the other day here are pics on how I prepared it I used Ti Leaves but you do not have to.  I put in my crock pot on med for 8 hours or until done. depends on crock pot.
