This is my second try I did a recipe that used condensed milk and it was good and little chewy. This is a basic Soda cracker toffee recipe .
1. You line the bottom of a jelly pan I got a 9x10 one at dollar tree
2. line the pan with heavy duty foil you need this so you can take the candy out of pan easily . Spray the foil with pam or oil it makes it easier.. trust me.
3. line the pan with saltine type of crackers fill all spaces you may have to break some to get along edges
4. preheat oven to 425 degrees
5. 2 blocks butter (1cup) and 1 cup brown sugar I used dark but light is fine . Put in pan and cook on med/low and stir it will start to bubble and thicken I didnt use a thermometer with its bubbly keep stirrng so it dont burn just slow smooth stir I used a wooden spoon . once its bubbly keep going for about 2-3 minutes
6. Pour over crackers spread evenly
7. Now bake for about 5 minutes or until brown
8. I mixed chocolate chips with the heath topping together then put over top of hot cracker & sugar pan let that sit for 5 minutes then start spreading the chocolate chips will melt but the heath topping doesnt so it will be lumpy.
Lots of people say add nuts or toppings over the chocolate well i tried that and the chocolate is hot and you have to press it into the chocolate to stay and i had nuts just falling off the top. so mix in all in and spread with the chocolate.
let cool i put in frig when chocolate was firm i took out and removed foil and cut into little squares.
Winner!! this will be in my save recipe file. This is really quick to make and simple its the waiting time for it to cool down. You will feel like a master candy maker.... Great for holiday gift giving.. I think I will be doing this this year!
* When I make a recipe i put comments on it and have a binder I save them .. The ones that I didnt like I would make comments too. especially if its something I like to keep trying recipes like bread you cannot remember if you made it already.

Vaughns Chocolate Bon Bons
I named this Vaughns because my son when he was a kid LOVED THIS the most!!
Ingredients
1 stick of butter (no substitute)
3 cups of rice krispies
2 cups smooth creamy peanut butter
1/2 slab parafin wax (I know but you need this or chocolate will melt) you may not need this if your chocolate chips wont melt if you dont want to use wax you can store in freezer
1 box confectioner sugar
1 (12 oz package chocolate chips) or you can use wilton chocolate melts
Mix butter, peanut butter and sugar into the rice krispies. mix thoroughly best you use your hands then roll into balls squeeze so the ball is firm.
Now mix the parafin and chocolate and melt in microwave or double boiler. Now they have a chocolate melting pot thats amazing.
Dip ball in chocolate and cool on rack or parchment or wax paper.
I drizzle another chocolate over the top for decoration.

Ingredients
1 lb. ground pork
1/4 cabbage chopped in fine long pieces
2 cups bean sprouts
3 carrots finely grated
2 eggs
1/4 finely chopped onion
1 teaspoon garlic powder or fresh garlic
1/4 teaspoon salt
1/4 teashpoon pepper
1 block Tofu let stand on paper towel to drain water
Egg roll wrappers
Crumble Tofue and add all ingredients together.
Put a generous portion onto egg roll wrapper in center and roll halfway then fold over both ends then finish rolling.
Seal with beaten raw egg
Pan fry till golden brown and meat is cooked do not use too much oil.

Bisquick Mix
Garlic Salt
Pepper
Sesame Seeds
Cut chicken into little pieces about 1 inch in size
Mix Bisquick mix with garlic salt, pepper,sesame seeds (you can add whatever spices you like)
Add water use a hand wisk batter needs to be thin (watery) test a few
Deep fry in oil until golden brown
Serve with sweet & sour sauce. You can buy in the bottle at the store

Oven Roasted Hawaii Style Kalua Pig
I use to own a lunch wagon many years ago called "Hula Lunch Wagon" It use to be by Hawaiian Airline Cargo at the Honolulu Airport . Every friday I would have Hawaiian Plate Lunch that included Kalua Pig I roasted ALOT of pork butts on thursday night :)
Kalua Pig
Ingredients
Pork Butt defrosted
Rock Salt (Hawaiian Salt)
Liquid Smoke I use 1/2 the bottle
Ti Leaves best , banana leaves ok
Foil
Bake all day or night 8 + hours in a 225 degree oven @ Bake
You need to score the pork butt fat then rub the with hawaiian salt a nice layer all around . place the pork on the leaves if not on the foil , pour 1/2 bottle of liquid smoke and seal foil. place in a baking pan and cook all day.
You can also cook it all day in crock pot/slow cooker. same process .
You can also put it frozen in the instant pot on high for 1 1/2 hours amazing it will be done in such a short time but it will not have the flavor like in the oven. I find the oven taste the best. but they all work.
Shred
I taste it and if it needs more liquid smoke or salt i will add more .
I just made this the other day here are pics on how I prepared it I used Ti Leaves but you do not have to. I put in my crock pot on med for 8 hours or until done. depends on crock pot.

Arroz Con Pollo "Chicken & Rice" A family recipe
Arroz Con Pollo "Chicken & Rice"
This recipe is from an Uncle who is a great cook and is from the Dominican Republic. It will impress any guest. A great potluck dish and inexpensive.
Ingredients: Preheat Oven Bake/350
1 lg pkg chicken thighs approx 12 pieces
1 stick butter
1/2 cup olive oil
2 large cloves finely chopped
1 16 oz can tomatoes save the water and chop tomatoes
2 teaspoon tumeric
1 1/2 teaspoon salt
2 cups uncle bens long grain rice uncooked
3 cups chicken broth plus the tomato water
1 large chopped onion
1/2 cup chopped cilantro
In a large frying pan melt butter and put olive oil, onion and garlic cook until onion is translucent. Remove from frying pan place in a 9x13 rectangle baking pan. Pan fry chicken til golden brown slightly cooked with the remaining oil. meanwhile combine all the other ingredients in the pan with the onions and mix well. Place chicken on top of rice and bake for 45 min covered with foil. Remove cover for the next 15 min or until golden brown.
Serve with garlic bread .
